Lemon Tahini Dressing
- 4 Tbsp Tahini
- 4 Tbsp Water
- 1-2 Lemons, juiced
- 1 Tbsp Tamari, to taste
- ½ Onion
- 1 stick Celery
- ¼ red Paprika
- 2 Tbsp good quality Olive oil
Place all ingredients except for oil in a food processor. Blend until smooth, adding olive oil slowly (bit by bit). Add more Tamari if desired.
Tip:
This dressing tastes great poured over a fresh green salad, grilled or roasted vegetables, your favourite grain, and with falafels or veggie burgers. It can also be simply eaten with fresh strips of veggies.
Cold Soba Noodle Salad
- 250g Soba
Dressing
- 2 Tbsp Sesame Oil
- 2 Tbsp Tamari
- 3 Tbsp Brown Rice Vinegar
- 1 clove Garlic, finely chopped
- 2 Spring onions, finely sliced
- 1 Tbsp toasted Sesame seeds
Garnishes
- A few strips of toasted Nori, thinly sliced
- Japanese 7 spice shake
- Wasabi paste
Cook the noodles according to manufacturer's directions. Whilst noodles are cooking, whisk together the ingredients for the dressing in a large bowl. When noodles are cooked, rinse under cold water until thoroughly cooled. Add noodles to bowl and mix well with the dressing (your hands will work better than any utensil here).
Serve noodles on a plate and garnish with a few thin strips of toasted nori, a sprinkle of Japanese spice shake, and a dollop of wasabi paste to the side.
